The best ingredients

Gina Hardy's philosophy is to use the best Trinidadian ingredients for her truffles, including high quality chocolate -a 65 per cent single origin Trinidad dark chocolate.

The cocoa beans are harvested from Rancho Quemado in south Trinidad and Brasso Seco in the Northern Range.

Brasso Seco cocoa beans possess notes of nuts and coffee which make it a wonderful balance for the bright fruity notes of the Rancho Quemado cocoa beans.

Each box contains four flavours:

1. Trini Truffle – 65 per cent dark chocolate, laced with Trinidadian rum and skin-on ground roasted almonds, tossed in toasted coconut;

2. Mucho Mocha – 65 per cent dark chocolate, with finely ground Trinidadian coffee, and rolled in white chocolate and cinnamon;

3. Death by Chocolate – 75 per cent dark chocolate, flavoured with scotch whisky and double cream, rolled in pure cocoa powder; and

4. Ooh La La! – 70 per cent dark chocolate with cranberries and black currants soaked in apricot brandy. Rolled in pink powdered sugar.

Each box retails for $195.
